Salad Base:
- 2 cans chickpeas 15 oz each, drained and rinsed
- 1 red bell pepper diced
- 1 cucumber diced
- ½ red onion finely chopped
- 1 cup cherry tomatoes halved
- ¼ cup parsley chopped
- ¼ cup fresh dill or cilantro optional, but adds amazing flavor
Dressing:
- 3 tablespoons olive oil
- 2 tablespoons lemon juice freshly squeezed is best
- 1 tablespoon red wine vinegar
- 1 clove garlic minced
- ½ teaspoon Dijon mustard for tang and creaminess
- Salt and black pepper to taste
- Optional: a pinch of crushed red pepper or paprika for a little kick
Add-ons (optional):
- ½ cup crumbled feta cheese
- ½ avocado diced
- A handful of spinach or arugula
- A sprinkle of everything bagel seasoning seriously, it works
Prep the veggies:
