Ingredients
  

Salad Base:

  • 2 cans chickpeas 15 oz each, drained and rinsed
  • 1 red bell pepper diced
  • 1 cucumber diced
  • ½ red onion finely chopped
  • 1 cup cherry tomatoes halved
  • ¼ cup parsley chopped
  • ¼ cup fresh dill or cilantro optional, but adds amazing flavor

Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed is best
  • 1 tablespoon red wine vinegar
  • 1 clove garlic minced
  • ½ teaspoon Dijon mustard for tang and creaminess
  • Salt and black pepper to taste
  • Optional: a pinch of crushed red pepper or paprika for a little kick

Add-ons (optional):

  • ½ cup crumbled feta cheese
  • ½ avocado diced
  • A handful of spinach or arugula
  • A sprinkle of everything bagel seasoning seriously, it works

Instructions
 

Prep the veggies:

  • Dice your bell pepper, cucumber, onion, and tomatoes into small, even pieces. Chop the herbs and set everything aside.

Rinse the chickpeas:

  • Drain and rinse your chickpeas under cold water. This helps remove that canned taste and gives them a fresh bite.

Mix the dressing:

  • In a small bowl or jar, whisk together olive oil, lemon juice, vinegar, garlic, mustard, salt, and pepper. Adjust to taste — more lemon for brightness, or more olive oil for a smoother flavor.

Combine:

  • In a large mixing bowl, toss the chickpeas and chopped veggies together. Pour the dressing on top and stir gently until everything’s well coated.

Let it chill:

  • Be sure to cover and refrigerate for at least 30 minutes before serving. This step is key — it lets the flavors mingle and soak into the chickpeas.

Serve:

  • Spoon into bowls, sprinkle with feta or herbs, and dig in!
