Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg optional but lovely
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 medium apples peeled and diced (about 2 cups)
  • 2 large eggs
  • 1 ¾ cups milk dairy or unsweetened almond milk
  • cup pure maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • ¼ cup chopped walnuts or pecans optional
  • 2 tablespoons brown sugar for topping optional

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). Lightly grease your baking dish with butter or oil.

Step 2: Mix the Dry Ingredients

  • In a large bowl, combine the rolled oats, cinnamon, nutmeg, baking powder, and salt. Stir well so the spices are evenly distributed.

Step 3: Add the Apples

  • Fold in the diced apples and chopped nuts if using. Make sure the apples are evenly mixed throughout the oats.

Step 4: Mix the Wet Ingredients

  • In a separate bowl, whisk together the eggs, milk, maple syrup, melted butter, and vanilla extract until smooth.

Step 5: Combine Everything

  • Pour the wet mixture into the dry oat mixture. Stir gently until fully combined. The oats will start soaking up the liquid immediately.

Step 6: Transfer to Baking Dish

  • Pour the mixture into your prepared baking dish and spread it evenly. If you like a slightly caramelized top, sprinkle a little brown sugar over the surface.

Step 7: Bake

  • Bake for 35–40 minutes, or until the center is set and the top is lightly golden.

Step 8: Cool and Serve

  • Let it cool for about 5–10 minutes before slicing. This helps it firm up nicely.
  • Serve warm, with extra maple syrup, yogurt, or a splash of milk if desired.
