For the Glaze (Optional but heavenly):
3tbspbutter
1/4cupbrown sugar
2tbspmilk or cream
1/2cuppowdered sugar
1/2tspvanilla extract
Instructions
Step 1: Preheat and Prep
Warm the oven to 350degF (175 °C). Lightly grease or parchment-paper your 9x13-inch pan.
Step 2: Mix Dry Ingredients
Combine flour, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice in a large bowl and mix. Set aside.
Step 3: Add Wet Ingredients.
Whisk together oil, sugar, brown sugar, eggs, and vanilla in another large bowl and make it a little thick.
Step 4: Bring It All Together
Gradually pour the dry mixture on the wet mixture and mix very well using a spatula. The batter shall be thick-- have no fears! Add in the chopped apples, and in case you are adding nuts or raisins, add them at this point.
Step 5: Bake to Perfection
The batter should then be poured into the pan you were using and the top flattened. Bake between 50-60 minutes or until a toothpick put in the center of the sweets comes out clean. The section above should be golden-brown, and your kitchen will smell madly good.
Step 6: Make the Glaze
As the cake is cooling down, melt butter in a small saucepan on medium heat. Add the brown sugar and milk and stir until the sugar is dissolved. Take off the heat, and add powdered sugar and vanilla, and mix till smooth. Drizzle over the warm cake.
Step 7: Cool and Serve
Allow the cake to cool down, then cut it. Eat hot to be most comfortable - perhaps a scoop of vanilla ice cream or a swirl of whipped cream.
