- 1 cup full-fat mayonnaise
- 1 medium red bell pepper finely chopped
- 1 fresh jalapeño seeds removed and finely chopped
- 1 tablespoon minced chipotle pepper in adobo sauce
- 1 teaspoon adobo sauce from the can
- 2 cloves garlic minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon white vinegar
- 1 teaspoon honey or sugar
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper adjust to taste
- ½ teaspoon salt or to taste
- ¼ teaspoon freshly ground black pepper
Optional but lovely:
- 1 tablespoon sour cream for extra creaminess
- A squeeze of fresh lemon juice for brightness
Step 1: Sauté the Peppers
In a small skillet over medium heat, add a tiny splash of oil. Toss in the red bell pepper and jalapeño. Sauté for about 5–6 minutes until softened but not browned. You want them tender and slightly sweet.
Add the garlic in the last 30 seconds. Stir gently. Let everything cool completely.
Step 2: Blend the Heat
Transfer the cooled pepper mixture into a blender. Add the chipotle pepper, adobo sauce, and a tablespoon of mayonnaise. Blend until smooth.
This is where the flavor really starts to come alive. You’ll smell the smokiness immediately.
Step 3: Build the Base
In a mixing bowl, add the remaining mayonnaise, apple cider vinegar, white vinegar, honey, smoked paprika, cayenne, salt, and black pepper.
Whisk until smooth and creamy.
Step 4: Combine Everything
Fold the blended pepper mixture into the mayonnaise base. Stir slowly and taste as you go.
If you want it spicier, add a little more chipotle or cayenne. If it’s too spicy, stir in a spoon of sour cream.
Step 5: Chill
Transfer to an airtight jar and refrigerate for at least one hour. This resting time allows the flavors to settle and deepen.
