For the Cheese Filling
- 8 oz cream cheese softened
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella or Monterey Jack
- 6 slices bacon cooked and crumbled
- 2 jalapenos finely diced (seeds removed for mild heat)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper to taste
For Coating
- 1 cup all-purpose flour
- 2 eggs beaten
- 1 1/2 cups breadcrumbs or panko
For Cooking
- Oil for frying or cooking spray for baking
In a large bowl, mix cream cheese, shredded cheeses, bacon, jalapenos, garlic powder, onion powder, salt, and pepper until smooth.
Scoop mixture and roll into small balls.
Chill the balls in the fridge for 30 minutes to firm up.
Roll each ball in flour, dip in egg, then coat in breadcrumbs.
For frying: Heat oil and fry until golden brown.
For baking: Bake at 400 F for 18 to 20 minutes, flipping once.
Drain on paper towels and serve warm.
