Ingredients
  

For the Fritters:

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter melted
  • 1 teaspoon pure vanilla extract
  • 2 cups finely chopped fresh apples about 2 medium apples
  • Best apples to use: Honeycrisp Granny Smith, or Fuji.

For the Vanilla Glaze:

  • 1 cup powdered sugar
  • 2 –3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. This prevents sticking and makes cleanup easy.

Step 2: Prepare the Apples

  • Peel and core the apples if desired. Chop them into small, even pieces. You want them small enough to bake evenly but large enough to still feel juicy inside the fritters.
  • Set them aside.

Step 3: Mix the Dry Ingredients

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. The spices should be evenly distributed so every bite has warm flavor.

Step 4: Mix the Wet Ingredients

  • In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract until smooth.

Step 5: Combine Everything

  • Pour the wet mixture into the dry ingredients. Gently stir with a spatula until just combined. Do not overmix. The batter should be thick.
  • Fold in the chopped apples. The batter will look chunky and rustic — that is exactly what you want.

Step 6: Shape the Fritters

  • Using a spoon or cookie scoop, drop mounds of batter onto the prepared baking sheet. Slightly flatten each mound with the back of a spoon so they bake evenly.
  • Leave space between each fritter.

Step 7: Bake

  • Bake for 16–18 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
  • The edges may be slightly crisp while the centers stay soft.

Step 8: Prepare the Glaze

  • While the fritters cool slightly, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust milk for desired consistency.

Step 9: Glaze and Set

  • Drizzle the glaze generously over warm fritters. Let them sit for 5–10 minutes so the glaze can set.
  • Serve warm for the best texture.
