For the Fritters:
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup whole milk
- 1/4 cup unsalted butter melted
- 1 teaspoon pure vanilla extract
- 2 cups finely chopped fresh apples about 2 medium apples
- Best apples to use: Honeycrisp Granny Smith, or Fuji.
For the Vanilla Glaze:
- 1 cup powdered sugar
- 2 –3 tablespoons milk
- 1/2 teaspoon vanilla extract
Step 2: Prepare the Apples
Step 3: Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. The spices should be evenly distributed so every bite has warm flavor.
Step 4: Mix the Wet Ingredients
In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract until smooth.
Step 5: Combine Everything
Pour the wet mixture into the dry ingredients. Gently stir with a spatula until just combined. Do not overmix. The batter should be thick.
Fold in the chopped apples. The batter will look chunky and rustic — that is exactly what you want.
Step 6: Shape the Fritters
Using a spoon or cookie scoop, drop mounds of batter onto the prepared baking sheet. Slightly flatten each mound with the back of a spoon so they bake evenly.
Leave space between each fritter.
Step 7: Bake
Bake for 16–18 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
The edges may be slightly crisp while the centers stay soft.
Step 8: Prepare the Glaze
While the fritters cool slightly, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust milk for desired consistency.
