Ingredients
  

  • 6 large eggs
  • 1 cup cottage cheese small curd recommended
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon butter or cooking spray for greasing dish

Optional Add-Ins

  • ½ cup chopped spinach or bell peppers
  • 2 tablespoons fresh herbs parsley, chives, or dill
  • ¼ cup shredded cheese cheddar or mozzarella

Instructions
 

Step 1: Preheat and Prepare

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish with butter or cooking spray to prevent sticking.

Step 2: Mix the Eggs and Cottage Cheese

  • Crack the eggs into a mixing bowl. Add the cottage cheese, salt, and pepper. Whisk until well combined. The mixture doesn’t need to be perfectly smooth—some cottage cheese texture is fine.

Step 3: Add Optional Mix-Ins

  • If you’re adding vegetables or herbs, gently fold them into the egg mixture. Make sure any vegetables are chopped small so they cook evenly.

Step 4: Bake

  • Pour the mixture into the prepared baking dish. Place it in the oven and bake until the eggs are set and lightly golden on top. The center should be firm but still slightly soft.

Step 5: Rest and Serve

  • Let the dish cool for a few minutes before slicing. This helps it set and makes serving easier.
