For the Cauliflower
- 1 large head cauliflower cut into bite-sized florets (about 6–7 cups)
- 1 cup all-purpose flour
- 1 cup milk dairy or unsweetened plant-based
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup panko breadcrumbs
For the Bang Bang Sauce
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 –2 tablespoons sriracha adjust to taste
- 1 teaspoon honey or sugar optional, for extra sweetness

Step 1: Prep the Cauliflower

In a large bowl, whisk together the flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper. The batter should be smooth and thick enough to cling to the cauliflower without dripping off completely.
