Ingredients
  

For the Fried Rice

  • 3 cups cooked jasmine rice preferably day-old
  • 2 tablespoons vegetable oil
  • 3 cloves garlic finely minced
  • 1 teaspoon grated fresh ginger
  • 1 cup cooked shrimp or diced chicken
  • 2 large eggs
  • 1 cup mixed vegetables carrots, peas, and corn
  • 3 green onions sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

For the Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 teaspoon sriracha adjust to taste
  • 1 teaspoon honey
  • 1 teaspoon rice vinegar

Instructions
 

Step 1: Make the Bang Bang Sauce

  • In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar.
  • Taste the sauce and adjust the spice level if needed. Set it aside while you prepare the rice.

Step 2: Prepare the Pan

  • Heat a large wok or skillet over medium-high heat. Add the vegetable oil and let it heat until shimmering.
  • Add the minced garlic and ginger. Stir for about 30 seconds until fragrant.

Step 3: Cook the Eggs

  • Push the garlic mixture slightly to the side and crack the eggs directly into the pan. Scramble them gently until just cooked.

Step 4: Add the Vegetables

  • Add the mixed vegetables and stir-fry for about 2 minutes. They should soften slightly but still keep some texture.

Step 5: Add the Rice

  • Add the cooked rice to the pan. Break apart any clumps with your spatula so the grains stay fluffy.
  • Stir-fry for about 3–4 minutes so the rice heats through and starts getting lightly toasted.

Step 6: Add Protein

  • Add the cooked shrimp or chicken to the pan. Toss everything together so the ingredients are evenly mixed.

Step 7: Season the Rice

  • Pour in the soy sauce and sesame oil. Stir everything together so the rice absorbs the flavor.

Step 8: Add the Bang Bang Sauce

  • Drizzle a few tablespoons of the bang bang sauce over the rice. Toss gently so the rice becomes lightly coated.
  • You don’t want to drown the rice—just enough to give it that creamy, spicy flavor.

Step 9: Finish the Dish

  • Add the sliced green onions and give everything one last toss.
  • Taste and adjust with salt or extra sauce if needed.
  • Serve hot and enjoy.
