For the Fried Rice
- 3 cups cooked jasmine rice preferably day-old
- 2 tablespoons vegetable oil
- 3 cloves garlic finely minced
- 1 teaspoon grated fresh ginger
- 1 cup cooked shrimp or diced chicken
- 2 large eggs
- 1 cup mixed vegetables carrots, peas, and corn
- 3 green onions sliced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
For the Bang Bang Sauce
- 1/2 cup mayonnaise
- 3 tablespoons sweet chili sauce
- 1 teaspoon sriracha adjust to taste
- 1 teaspoon honey
- 1 teaspoon rice vinegar
Step 1: Make the Bang Bang Sauce
In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar.
Taste the sauce and adjust the spice level if needed. Set it aside while you prepare the rice.
