Ingredients
  

  • 1 ½ pounds ground turkey preferably 85–90% lean
  • 1 small yellow onion grated
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh parsley finely chopped
  • Optional: fresh thyme or rosemary very finely chopped

For serving:

Instructions
 

Prepare the Onion

  • Grate the onion directly into a bowl. This creates moisture and flavor without chunks. Don’t drain it. That liquid is gold.

Mix the Burger Base

  • Add olive oil, garlic, salt, pepper, Worcestershire sauce, Dijon, and herbs to the onion. Stir gently.

Add the Turkey

  • Add the ground turkey and mix just until combined. Overmixing makes tough burgers. Use your hands lightly and stop early.

Shape the Patties

  • Form into 4 equal patties. Make a small indentation in the center of each—this helps them cook evenly.

Cook

  • Heat a skillet over medium heat with a drizzle of olive oil. Cook burgers for 5–6 minutes per side, until golden and cooked through.
  • Let them rest for 3–5 minutes before serving.
