- 1 can 15 oz black-eyed peas, drained and rinsed
- 1 ½ cups sweet corn fresh, canned, or thawed frozen
- 1 red bell pepper finely diced
- 1 yellow bell pepper finely diced
- 1 small red onion finely chopped
- 1 jalapeño seeded and minced (adjust to taste)
- 1 cup cherry tomatoes halved
- ¼ cup fresh cilantro chopped
- 1 ripe avocado diced (optional but highly recommended)
For the Dressing:
- ¼ cup extra virgin olive oil
- 3 tablespoons fresh lime juice
- 2 tablespoons red wine vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon salt adjust to taste
- ½ teaspoon black pepper
- ½ teaspoon ground cumin

Finely dice the bell peppers into small, even pieces. Chop the red onion small enough so it blends into the salad without overpowering a bite. Mince the jalapeño carefully (remove seeds if you prefer less heat). Halve the cherry tomatoes and chop the cilantro.
