- 2 large sweet onions such as Vidalia, sliced into 1/2-inch rings
- 1 1/2 cups all-purpose flour divided
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 1/4 cups cold sparkling water or cold club soda
- Vegetable oil for frying about 3–4 cups
