Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons milk
  • ¼ cup pastel sprinkles optional but recommended
  • ½ cup powdered sugar for glaze or dusting
  • 1 –2 teaspoons lemon juice for glaze

Step 1: Prepare Your Oven and Tray

  • Preheat your oven to 180°C (350°F). Line your baking tray with parchment paper. This prevents sticking and gives your cookies a perfect bottom texture.

Step 2: Mix the Dry Ingredients

  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside. This ensures even distribution when we combine everything later.

Step 3: Cream Butter and Sugar

  • In a large bowl, beat the softened butter and sugar until light and fluffy. This step is very important because it creates the soft texture we want. Don’t rush it—take at least 2–3 minutes.

Step 4: Add Egg and Flavor

  • Add the egg and mix well. Then stir in vanilla extract, lemon zest, and lemon juice. At this stage, the batter will smell fresh, bright, and slightly tangy.

Step 5: Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients into the wet mixture. Mix gently until just combined. Do not overmix, or your cookies may turn dense.

Step 6: Add Milk and Sprinkles

  • Add milk to loosen the dough slightly. Fold in pastel sprinkles for that cheerful spring look.

Step 7: Scoop the Dough

  • Use a cookie scoop or tablespoon to drop evenly sized dough balls onto your prepared tray. Leave space between them.

Step 8: Bake

  • Bake for 10–12 minutes, or until the edges are lightly golden but the center is still soft.

Step 9: Cool

  • Let cookies rest on the tray for 5 minutes, then transfer to a cooling rack.

Step 10: Optional Glaze

  • Mix powdered sugar with lemon juice to create a light glaze. Drizzle over cooled cookies or dust with powdered sugar.
