  • 1 lb breakfast sausage pork or turkey
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups whole milk
  • 1 teaspoon black pepper or to taste

  • 6 large eggs
  • 1/2 cup heavy cream or whole milk
  • 1 cup shredded cheddar cheese

Step 1: Prepare the Biscuit Base

Step 2: Brown the Sausage

  • In a large skillet over medium heat, cook the sausage until browned and fully cooked. Break it up as it cooks and enjoy that savory aroma filling the kitchen. Transfer the sausage to a plate, leaving the drippings in the pan.

Step 3: Make the Creamy Gravy

  • Sprinkle the flour into the sausage drippings and whisk until smooth. Slowly pour in the milk, whisking constantly, and cook until thickened. Season with salt, pepper, and any optional spices. Stir the cooked sausage back into the gravy.

Step 4: Whisk the Eggs

  • In a bowl, whisk together the eggs and heavy cream until smooth and pale. This mixture helps bind the casserole and adds a soft, custardy texture.

Step 5: Assemble the Casserole

  • Pour the sausage gravy evenly over the biscuit pieces. Drizzle the egg mixture on top, then sprinkle with shredded cheese. Make sure everything is evenly distributed.

Step 6: Bake Until Golden

  • Bake uncovered for 35–40 minutes, or until the top is set and lightly golden. Let the casserole rest for 10 minutes before serving so it slices cleanly.
