- 3 large eggs
- 1 cup blueberries fresh or frozen
- 1/2 cup rolled oats or oat flour
- 1/4 cup honey or maple syrup
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt

Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C).
Grease or line an 8x8 baking dish with butter or nonstick spray.
Set aside while you prepare the batter.
Step 2: Mix the Batter
In a large mixing bowl, whisk together cottage cheese, eggs, honey or maple syrup, vanilla, cinnamon, and salt.
Whisk until everything blends into a smooth, creamy mixture.
Add the oats (or oat flour) and stir until fully combined.
Gently fold in the blueberries, being careful not to crush them.
Step 3: Bake
Pour the mixture into your prepared baking dish.
Smooth the top with a spatula.
Bake for 35–40 minutes or until the center is set and the edges turn lightly golden.
Allow to cool for at least 10 minutes to help it firm up.
