Ingredients
  

  • 1 pound pork breakfast sausage
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 teaspoon freshly ground black pepper adjust to taste
  • ½ teaspoon salt start small and adjust
  • ¼ teaspoon garlic powder optional but recommended

Instructions
 

  • Heat a large skillet over medium heat
  • Add the sausage and cook, breaking it into small crumbles
  • Cook until fully browned and slightly caramelized, about 8–10 minutes
  • Do not drain the fat — this is essential for flavor

Once the sausage is cooked:

  • Add the butter directly to the pan and let it melt
  • Sprinkle the flour evenly over the sausage
  • Stir constantly and cook for about 2 minutes to remove the raw flour taste

Now build the gravy:

  • Slowly pour in the milk while whisking or stirring continuously
  • Keep stirring as the gravy thickens to prevent lumps
  • Lower the heat to medium-low
  • Simmer gently for 5–7 minutes, stirring often

Finish with seasoning:

  • Add black pepper, salt, and garlic powder if using
  • Taste and adjust seasoning
  • Serve hot over warm biscuits
