For the Brownie Layer:
- 1 cup granulated sugar
- 1/2 cup unsalted butter melted
- 2 large eggs
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all purpose flour
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup chocolate chips
For the Cookie Layer:
- 1/2 cup unsalted butter softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 1/2 cups all purpose flour
- 1 cup chocolate chips
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
Step 2: Make the Brownie Batter
In a bowl, whisk melted butter and sugar until smooth. Add the eggs and vanilla and whisk again.
Add the cocoa powder, flour, and salt. Mix until just combined. Fold in the chocolate chips. Spread this rich, glossy batter into the bottom of your pan.
Step 3: Make the Cookie Dough
In another bowl, beat the softened butter, brown sugar, and white sugar until creamy. Add the egg and vanilla.
Stir in flour, baking soda, and salt. Fold in chocolate chips.
Drop spoonfuls of cookie dough over the brownie batter. It does not need to be perfect. Imperfect layers create the prettiest brookies.
Step 4: Bake
Bake for 28 to 35 minutes depending on your pan size and preferred texture.
If you want gooier brookies, pull them out earlier. If you want a firmer, more cookie-bar feel, bake a bit longer.
