Ingredients
  

For the Brownie Layer:

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all purpose flour
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

For the Cookie Layer:

  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups all purpose flour
  • 1 cup chocolate chips
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions
 

Step 1: Preheat the Oven

  • Set your oven to 350 F. Line your baking pan with parchment paper and lightly spray it. This makes the bars easy to lift and slice.

Step 2: Make the Brownie Batter

  • In a bowl, whisk melted butter and sugar until smooth. Add the eggs and vanilla and whisk again.
  • Add the cocoa powder, flour, and salt. Mix until just combined. Fold in the chocolate chips. Spread this rich, glossy batter into the bottom of your pan.

Step 3: Make the Cookie Dough

  • In another bowl, beat the softened butter, brown sugar, and white sugar until creamy. Add the egg and vanilla.
  • Stir in flour, baking soda, and salt. Fold in chocolate chips.
  • Drop spoonfuls of cookie dough over the brownie batter. It does not need to be perfect. Imperfect layers create the prettiest brookies.

Step 4: Bake

  • Bake for 28 to 35 minutes depending on your pan size and preferred texture.
  • If you want gooier brookies, pull them out earlier. If you want a firmer, more cookie-bar feel, bake a bit longer.

Step 5: Cool and Slice

  • Let the brookies cool at least 20 minutes. Lift them out with the parchment paper, slice into squares, and admire your dessert masterpiece.
