Equipment

  • Large mixing bowl
  • Medium saucepan for browning butter
  • Baking sheet
  • Parchment paper
  • Wooden spoon or silicone spatula
  • Measuring cups and spoons.
  • Cooling rack

Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups toffee bits

Instructions

Step 1: Brown the Butter

  • In a medium saucepan over medium heat, melt the butter and cook, stirring occasionally, until it turns golden brown and smells nutty. Watch carefully so it doesn’t burn. I like to swirl the pan gently and smell the transformation—it’s part of the magic.

Step 2: Mix Sugars and Eggs

  • Transfer the brown butter to a large mixing bowl. Add the brown sugar and granulated sugar, mixing until smooth. Beat in eggs one at a time, followed by vanilla extract. The dough will already smell irresistible.

Step 3: Combine Dry Ingredients

  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until just combined. Don’t overmix—soft, chewy centers require gentle handling.

Step 4: Fold in Toffee Bits

  • Gently fold in the toffee bits, ensuring they’re evenly distributed throughout the dough. These little bursts of caramelized sweetness are what make each bite delightful.

Step 5: Scoop and Chill

  • Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet. For thicker cookies, chill the dough for 15–30 minutes. I often sneak a little nibble while scooping—it’s a tradition I recommend.

Step 6: Bake to Perfection

  • Bake at 180°C (350°F) for 10–12 minutes, or until edges are golden brown but centers remain soft. Let them cool on the baking sheet for a few minutes before transferring to a cooling rack.

Step 7: Enjoy and Share

  • Serve warm for the ultimate experience. Pair with a glass of milk, a cup of tea, or enjoy them straight from the cooling rack. The first bite is always the best, but I won’t judge if you grab a second.

Notes

  • Brown butter slowly to enhance flavor without burning
  • Slightly underbake for chewy, soft centers
  • Use parchment paper for even baking and easy cleanup
  • Let cookies cool completely for better texture
  • Experiment with adding a sprinkle of sea salt on top for a sweet-salty punch
