Step 1: Cream the Butter and Sugars

  • In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy. This step usually takes about two to three minutes and creates the base for perfectly soft cookies.

Step 2: Add Eggs and Vanilla

  • Mix in the egg, egg yolk, and vanilla extract until smooth and creamy. The extra egg yolk adds richness and helps keep the centers tender.

Step 3: Mix the Dry Ingredients

  • In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Slowly add this mixture to the wet ingredients, stirring until a soft dough forms.

Step 4: Fold in the Caramel Pieces

  • Use a spatula to gently fold in the caramel bits. Try to distribute them evenly so every cookie has gooey caramel pockets.

Step 5: Scoop the Cookie Dough

  • Line your baking sheet with parchment paper. Scoop tablespoon-sized portions of dough and place them about two inches apart.
