Main Ingredients
- 1 lb ground beef
- 1 small onion finely diced
- 2 cloves garlic minced
- 4 cups potatoes peeled and diced
- 3 cups chicken or beef broth
- 2 cups milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
Flavor Builders
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried parsley
Optional Toppings
- Crispy bacon bits
- Extra shredded cheese
- Chopped green onions
- Croutons or toasted bread cubes
Step 1: Brown the Beef
Start by heating a skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
Add the diced onion and cook until soft and translucent. Toss in the garlic and cook for about 30 seconds, just until fragrant.
Step 2: Transfer to Crockpot
Step 3: Make It Creamy
About 30 minutes before serving, melt butter in a small saucepan. Whisk in flour and cook for a minute to form a roux. Slowly whisk in milk and cream until smooth and thickened.
Pour this mixture into the crockpot and stir well.
