For the Egg Rolls:
- 2 huge avocados peeled, diced.
- 1/2 cup chopped sun-dried tomatoes.
- 2 tbsp red onion finely diced
- 2 tbsp fresh cilantro chopped
- 1 tbsp lime juice
- ½ tsp salt adjust to taste
- 6 –8 egg roll wrappers
- Frying oil vegetable, canola, or peanut
In the Tamarind-Cashew Dipping Sauce:
- 1/2 cup cashews which have been moistened in hot water in 20 minutes.
- 2 tbsp tamarind paste
- 3 tbsp honey or agave nectar to be vegan
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 garlic clove minced
- 2 tbsp green onion chopped
- 2 tbsp cilantro chopped
- ¼ cup water to thin, as needed
Make the Dipping Sauce
Pour moist cashews in a blender.
Stir in tamarind paste, honey, rice vinegar, soy sauce, garlic, green onion, cilantro and water.
Blend until it is smooth and creamy. Thicken excessively by pouring in a little water.
Keep on refrigerating and prepare the egg rolls.
Prepare the Filling
Mash the avocados to a medium consistency using a fork in a medium bowl. You like it creamy and yet a bit lumpy.
Add salt, cilantro, lime juice, and sun-dried tomatoes and red onion. Mix until just combined.
Assemble the Egg Rolls
Place one egg roll wrapper on a flat surface with the corner facing you (with a diamond shape).
Spoon 2-3 tablespoons of avocado filling into the middle.
Take the bottom end and fold over the top of the filling, then touch the sides and roll inwards tightly to the top.
Wet the edge with a spot of water. Use the same wrappers for the rest of the way.
Fry the Egg Rolls
Bring 2 inches of oil in a deep skillet or pot to 350°F (175 C).
Bake batches of fried eggs in batches to golden brown and crispy (approximately 23 minutes a side).
Wipe off and dry away on paper towels.
To make a lighter one: Brush egg rolls with oil and bake at 400°F to 12-15 minutes, turning halfway through.
