Equipment

  • Glass jar/ airtight container
  • Microplane grater

Ingredients
  

  • 3/4 cup mayonnaise
  • 2 cloves of garlic minced
  • 2 tsp anchovy paste
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice freshly squeezed
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp Worcestershire sauce
  • 3 tbsp olive oil
  • Salt and black pepper to taste
  • And water or milk too, if you like it thinner- but I like it thick and smooth.

Instructions
 

Step 1: Blend the Flavor Base

  • Add mayonnaise, garlic, anchovy paste, Dijon mustard, lemon juice, Worcestershire sauce, and Parmesan cheese to a blender.
  • Combine and stir for 10-15 seconds until a smooth creamy mixture is achieved.

Step 2: Add the Olive Oil

  • On low with the blender, drizzle in the olive oil gradually. This assists in emulsifying the dressing, that silky restaurant quality.

Step 3: Season and Adjust

  • Taste it. Does it need more lemon? A pinch more salt? Perhaps an additional sprinkling of Parmesan? It is your time to make it yours.

Step 4: Chill and Serve

  • In a jar, pour the dressing, close the lid of the jar, and refrigerate at least 30 minutes before serving. It becomes slightly thicker, and the tastes become marvelous.
