Ingredients
  

For the Biscuits

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 6 tbsp cold unsalted butter cubed
  • ¾ cup cold buttermilk

For the Chicken Filling

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 lb chicken breast or thighs cubed
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 cup frozen peas
  • 2 garlic cloves minced
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • ½ tsp paprika
  • Salt & pepper to taste

For the Gravy

  • 3 tbsp butter
  • cup all-purpose flour
  • 3 cups chicken stock
  • 1 cup heavy cream
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper to taste

Instructions
 

Step 1: Make the Biscuits

  • Preheat oven to 425°F (220°C).
  • Combine flour, baking powder, baking soda, and salt in a large bowl.
  • With a pastry cutter (or fingers) in cold butter, cut the mixture into small pieces until it looks like coarse crumbs.
  • Add buttermilk and only stir until the dough is formed. Don’t overmix.
  • Spread dough over a floured area, approximately 3/8th inch thick. Cut into rounds.
  • bake 12–15 minutes, or until golden brown.

Step 2: Roast the Chicken and the Veggies.

  • Melt Butter in a Dutch oven or large skillet using olive oil.
  • Place chicken and cook till they turn light brown (not cooked extensively). Remove and set aside.
  • Add carrots, celery, onions, and garlic. Sauté until softened.
  • Add thyme, rosemary, paprika, salt, and pepper.

Step 3: Make the Gravy

  • Melt butter in the same skillet.
  • Add flour and cook 1-2 minutes to create a roux.
  • Gradually add chicken stock and then cream.
  • Sprinkle with garlic powder, onion powder, salt, and pepper.
  • Bring to a boil, approximately 5 to 7 minutes.

Step 4: Combine

  • Return the chicken and the vegetables to the gravy. Stir in peas.
  • Cook 10-15 minutes, until chicken is cooked and sauce is thick and creamy.
