Equipment

Ingredients
  

For the Chicken:

  • 4 chicken breasts without skin and bone.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil

For the Sauce:

  • 3 tablespoons unsalted butter.
  • 1 small onion finely sliced
  • 2 cups mushrooms sliced (button or cremini)
  • ¾ cup Riesling white wine
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt to taste
  • ¼ teaspoon pepper
  • ½ teaspoon Italian seasoning
  • ½ cup grated Parmesan cheese

For the Pasta:

  • 8 ounces fettuccine or penne pasta
  • Salt for boiling water

For Garnish:

  • Parsley or chives optional can be added as fresh nuts.
  • Extra Parmesan for serving

Instructions
 

Step 1: Cook the Pasta

  • Boil a lot of water with a lot of salt. Add the pasta and cook it as per package instructions till it is al dente. Shake and pour with a spoon of olive oil so it does not stick. Set aside.

Step 2: Season and Cook the Chicken.

  • Dry the chicken and sprinkle each side with salt, pepper, and a pinch of garlic. Prepare olive oil in a big skillet over medium-high heat. Then add the chicken and saute until it turns a golden brown on both sides (approximately 4-5 minutes each side).
  • Move to the plate and retain warm.

Step 3: Cook Mushrooms and onions.

  • Melt butter in the same skillet, and place it on medium heat. Add mushrooms and onions, which are sliced. Sauté 6-8 minutes until soft, golden, and stir occasionally.

Step 4: Deglaze with Riesling Wine.

  • Add the Riesling wine and stir, scraping off any browned bits of the pan. Simmer it 3-4 minutes or so - that is the magic! The wine begins to diminish, and the sauce is given the clear, sweet taste of the wine.

Step 5: Create the Cream Sauce

  • Onions (add chicken broth), heavy cream, Dijon mustard, salt, pepper, and Italian seasoning. Whisk the sauce as it comes to a point. Add Cheese, Parmesan cheese until creamy and smooth.

Step 6: Combine and Simmer

  • Pour the prepared chicken back into the skillet and pour the sauce on top. Allow the chicken to cook with everything for 5-6 minutes until it is cooked and the sauce sticks to the chicken.

Step 7: Add the pasta and serve

  • Cooked pasta can be added to the skillet and stirred with that delicious sauce to cover all pasta strands. Finish it with chopped parsley and extra parmesan and serve at once.
