Strip mesh strainer (to drain pasta)
For the Pasta
- 12 oz spaghetti or fettuccine
- 1 tbsp olive oil
- Salt for boiling water
For the Shrimp
- 1 lb of large shrimp peeled and deveined.
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp smoked paprika
- 1 tbsp lemon juice
- For the Sauce
- 3 tbsp butter
- 4 cloves garlic minced
- 1/2 cup white wine or chicken broth in its place
- 1 cup heavy cream
- ½ cup chicken stock
- 1 tbsp tomato paste
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/4 tsp flaked red pepper
- 1/4 tsp crushed red pepper flakes.
- Salt and pepper to taste
- 2 tbsp fresh parsley chopped
- Zest of one lemon
Step 2: Sauté the Shrimp
Heat a big skillet using medium heat with olive oil. Season and salt, pepper, and smoked paprika shrimp. Add shrimp to the pan and cook 2 minutes on each side or till they turn pink and opaque. Take it out of the skillet and put it on a plate.
Step 3: Build the Sauce Base
Step 4: Add Creamy Goodness
Add heavy cream, chicken stock and tomato paste. Blend until it becomes smooth and creamy. Add Italian seasoning, lemon zest, Parmesan cheese, and crushed red pepper. Cook the sauce over a period of 5 minutes until it begins to thicken.
Step 5: Bring It All Together
Add pasta and shrimp to the skillet. Stir softly to cover things with that delicious sauce. Add salt and pepper and finish by sprinkling fresh parsley.
Hot, serve with additional Parmesan as it will and squeeze lemon, should the fancy take you.
