Ingredients
  

For the Steak:

  • 4 beef tenderloin medallions approximately 6 oz each
  • Salt and freshly ground black pepper to taste.
  • 2 tablespoons olive oil
  • 2 tablespoons butter unsalted.

For the Diane Sauce:

  • 2 tablespoons saltless butter.
  • 1 shallot finely minced
  • 2 cloves garlic minced
  • 1 cup mushrooms thinly sliced
  • 1/4 cup brandy or cognac to deglaze
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • ½ cup beef broth
  • ¼ cup heavy cream
  • 1 tablespoon chopped fresh parsley.
  • Salt and pepper to taste
  • Garnish: lemon juice squeezed in optional
