Ingredients
  

For the beef filling

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce

For the melt

  • 8 slices sandwich bread or sourdough
  • 1 1/2 cups shredded cheddar cheese
  • 4 slices mozzarella or provolone cheese
  • 3 tablespoons butter softened

Optional additions:

  • sliced tomatoes
  • barbecue sauce

Instructions
 

Step 1: Cook the onions

  • Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for about 3–4 minutes until it becomes soft and slightly golden. Stir occasionally so it cooks evenly.

Step 2: Add garlic

  • Add the minced garlic and cook for another 30 seconds. The aroma should become fragrant but not burnt.

Step 3: Brown the ground beef

  • Add the ground beef to the skillet. Use a spatula to break it apart while it cooks. Continue cooking for about 6–7 minutes until the beef is browned and fully cooked.
  • Drain any excess fat if needed.

Step 4: Season the filling

  • Add salt, black pepper, paprika, onion powder, and Worcestershire sauce. Stir well so the seasoning coats the beef mixture evenly.
  • Let it cook for another 2 minutes so the flavors blend together.

Step 5: Prepare the bread

  • Spread softened butter on one side of each bread slice. This will help the bread toast to a crispy golden texture.

Step 6: Assemble the melts

  • Place one slice of bread butter-side down on a skillet or griddle over medium heat. Add a generous scoop of the beef mixture, then sprinkle shredded cheddar cheese on top.
  • Add a slice of mozzarella or provolone, then top with another slice of bread (butter side facing up).

Step 7: Toast the sandwich

  • Cook for about 3–4 minutes on each side. Press gently with a spatula so the bread toasts evenly and the cheese melts completely.

Step 8: Slice and serve

  • Remove from the skillet and let the sandwich rest for about one minute. Slice in half and serve warm.
