Ingredients
  

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon ketchup
  • 3 pounds potatoes peeled and cubed
  • 1/2 cup butter
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese

Optional ingredients:

  • 1/2 cup cooked bacon bits
  • 2 green onions sliced
  • 1/4 cup grated Parmesan cheese
  • Extra shredded cheese for topping

Instructions
 

Step 1: Prepare the Meatloaf Base

  • Preheat your oven to 375°F (190°C). In a large bowl, mix the ground beef, breadcrumbs, milk, eggs, onion, garlic, salt, pepper, paprika, and ketchup until just combined. Press the mixture evenly into the bottom of a greased baking dish.

Step 2: Bake the Meat Layer

  • Bake the meatloaf layer for 25–30 minutes, until it’s mostly cooked through and lightly browned. This helps remove excess fat and keeps the casserole from becoming greasy.

Step 3: Make the Mashed Potatoes

  • While the meat bakes, boil the potatoes in salted water until fork-tender. Drain, then mash with butter and sour cream until smooth and creamy. Season lightly with salt and pepper.

Step 4: Assemble the Casserole

  • Spread the mashed potatoes evenly over the baked meatloaf layer. Sprinkle generously with shredded cheddar cheese and any optional toppings you’re using.

Step 5: Bake Until Cheesy

  • Return the casserole to the oven and bake for 20–25 minutes, until the cheese is fully melted and lightly golden around the edges.

Step 6: Rest and Serve

  • Let the casserole rest for 10 minutes before serving. This allows the layers to set and makes slicing easier.
