Ingredients

  • 500 g ground beef or half beef, half pork for richer flavor
  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 2 cups tomato sauce
  • 1 cup crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon sugar optional, balances acidity

For the Cheese Layer:

  • 2 cups ricotta cheese
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Pasta:

  • 12 lasagna noodles
  • Water for boiling
  • 1 teaspoon salt for pasta water

Instructions
 

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil. Add lasagna noodles and cook until just al dente. You don’t want them too soft because they’ll continue cooking in the oven. Once done, drain and lay them flat on a tray so they don’t stick together.

Step 2: Prepare the Meat Sauce

  • Heat olive oil in a skillet over medium heat. Add onions and cook until soft and slightly golden. Add garlic and stir for about 30 seconds until fragrant.
  • Now add ground beef. Cook until browned, breaking it apart as it cooks. Once the meat is fully cooked, drain excess fat if needed.
