- 1 lb elbow macaroni
- ¼ cup unsalted butter
- ¼ cup all-purpose flour
- 2 cups whole milk
- ½ cup heavy cream
- 2 cups shredded sharp cheddar cheese
- ½ cup shredded Parmesan cheese
- ½ cup shredded Romano cheese
- ½ teaspoon salt adjust to taste
- ¼ teaspoon black pepper
Optional but lovely:
- A pinch of paprika for the top
Step 2: Make the Cheese Sauce
In a saucepan over medium heat, melt the butter. Whisk in flour and cook for about 1 minute, just until it smells slightly nutty.
Slowly whisk in milk and cream. Keep stirring until smooth and slightly thickened.
Step 5: Bake
Transfer to a greased baking dish. Sprinkle lightly with paprika if using.
Bake at 375°F (190°C) for 20–25 minutes, until bubbly and lightly golden on top.
Let it rest for 5 minutes before serving.
