Ingredients
  

  • 1 lb elbow macaroni
  • ¼ cup unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • ½ cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded Parmesan cheese
  • ½ cup shredded Romano cheese
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper

Optional but lovely:

  • A pinch of paprika for the top

Instructions
 

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil. Cook macaroni until just al dente. Don’t overcook—it will bake again. Drain and set aside.

Step 2: Make the Cheese Sauce

  • In a saucepan over medium heat, melt the butter. Whisk in flour and cook for about 1 minute, just until it smells slightly nutty.
  • Slowly whisk in milk and cream. Keep stirring until smooth and slightly thickened.

Step 3: Add the Cheese

  • Lower the heat and stir in cheddar, Parmesan, and Romano. Stir gently until melted and smooth. Season with salt and pepper.
  • Taste. Adjust if needed.

Step 4: Combine

  • Add cooked pasta to the cheese sauce. Stir until every piece is coated.

Step 5: Bake

  • Transfer to a greased baking dish. Sprinkle lightly with paprika if using.
  • Bake at 375°F (190°C) for 20–25 minutes, until bubbly and lightly golden on top.
  • Let it rest for 5 minutes before serving.
