Ingredients
  

  • 3 cups cooked shredded chicken
  • 2 cups cooked white or brown rice
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 cup salsa
  • 1 ½ cups shredded cheddar or Mexican blend cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste

Optional ingredients:

  • ½ cup diced bell peppers
  • ½ cup sliced black olives
  • Fresh cilantro for garnish
  • Sliced jalapeños for heat

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish to prevent sticking and make cleanup easier.

Step 2: Mix the Filling

  • In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, diced tomatoes with green chilies, salsa, and spices. Mix until everything is evenly coated.

Step 3: Layer the Casserole

  • Spoon half of the chicken mixture into the prepared baking dish. Sprinkle half of the cheese over the top. Add the remaining chicken mixture, then top with the remaining cheese.

Step 4: Bake

  • Cover the casserole with foil and bake for 20 minutes. Remove the foil and bake for an additional 10–15 minutes until the cheese is melted and bubbly.

Step 5: Garnish and Serve

  • Let the casserole rest for 5 minutes. Garnish with fresh cilantro, sliced jalapeños, or diced bell peppers if desired. Serve warm and enjoy!
