For the Chicken Scampi

  • pounds boneless skinless chicken breast cut into strips
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 5 cloves garlic minced
  • ½ cup chicken broth
  • ¼ cup dry white wine optional
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon red pepper flakes
  • 2 tablespoons chopped fresh parsley

For the Garlic Parmesan Rice

  • 1 cup long grain white rice
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon chopped parsley

Instructions
 

Step 1: Prepare and Season the Chicken

  • Pat the chicken strips dry with a paper towel. Season them with salt, pepper, and Italian seasoning so every piece is lightly coated with flavor.
  • Dry chicken browns much better, so don’t skip this step — it helps create that beautiful golden crust.

Step 2: Sear the Chicken Until Golden

  • Heat olive oil in a large skillet over medium‑high heat. Add the chicken in a single layer and cook for about 4–5 minutes per side until golden brown and cooked through.
  • The sound of the chicken sizzling in the pan is the first promise of flavor. Once done, transfer the chicken to a plate and set aside.

Step 3: Start the Garlic Parmesan Rice

  • In a medium saucepan, melt butter over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.
  • Stir in the rice and toast it gently for 1–2 minutes so the grains absorb the buttery garlic flavor.

Step 4: Simmer the Rice

  • Pour in the chicken broth, salt, and pepper. Bring everything to a gentle boil, then reduce the heat to low and cover.
  • Let the rice cook for about 15 minutes until tender and fluffy.

Step 5: Finish the Garlic Parmesan Rice

  • Once the rice is cooked, fluff it with a fork and stir in freshly grated parmesan cheese and chopped parsley.
  • The cheese melts into the rice, making it creamy, savory, and absolutely delicious.

Step 6: Build the Scampi Sauce

  • In the same skillet used for the chicken, melt butter over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.
  • Pour in the chicken broth and white wine, scraping up any browned bits from the pan — that’s pure flavor.

Step 7: Add Lemon and Spice

  • Stir in lemon juice and red pepper flakes. Let the sauce simmer gently for 3–4 minutes until slightly reduced.
  • The aroma at this point is incredible — garlicky, buttery, bright, and just a little spicy.

Step 8: Return the Chicken

  • Add the cooked chicken back into the skillet and toss it in the sauce until fully coated.
  • Let it simmer for another 2–3 minutes so the chicken absorbs all those wonderful flavors.

Step 9: Assemble the Dish

  • Spoon a generous portion of garlic parmesan rice onto each plate, then top with the chicken scampi and plenty of sauce.
  • Finish with fresh parsley and an extra sprinkle of parmesan.
