- 2 pounds boneless skinless chicken breasts or thighs, cut into 1 ½-inch cubes
- ⅓ cup honey
- 2 tablespoons chipotle peppers in adobo sauce finely minced
- 1 tablespoon adobo sauce from the can
- 3 cloves garlic minced
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon salt
- ½ teaspoon black pepper
- Fresh cilantro for garnish
- Lime wedges for serving

Step 1: Prepare the Marinade
In a mixing bowl, whisk together honey, minced chipotle peppers, adobo sauce, garlic, lime juice, olive oil, smoked paprika, cumin, salt, and pepper. The mixture should smell smoky, slightly sweet, and bright.
Step 2: Marinate the Chicken
Add the cubed chicken to the bowl and toss until evenly coated. Cover and refrigerate for at least 1 hour. For deeper flavor, marinate up to 4 hours.
The longer it marinates, the more flavorful it becomes.
