- 2 tbsp butter or oil
- 1 medium onion chopped
- 3 garlic cloves minced
- 2 roasted poblano peppers peeled and seeded
- 2 serrano peppers chopped (1–3 depending on spice level)
- 1 4 oz can diced green chiles
- 2 cups chicken broth
- 1 lb white American cheese cubed
- ½ cup fresh cilantro chopped
- Salt to taste
- Optional: ¼ cup sour cream or cream cheese
- Optional: juice of ½ lime
Roast poblanos until they blister and pull the skins and seeds off.
In a skillet, melt butter. Cook onion, garlic and serranos until soft.
Stir in 1/2 cup broth, green chile, cilantro, and roasted poblanos and mix to a smooth.
Add to a saucepan that contains leftover broth. Cheese may be added and stirred until melted.
Add broth as necessary. Optional: add sour cream or lime. Serve warm.
