Ingredients
  

  • 2 tbsp butter or oil
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 2 roasted poblano peppers peeled and seeded
  • 2 serrano peppers chopped (1–3 depending on spice level)
  • 1 4 oz can diced green chiles
  • 2 cups chicken broth
  • 1 lb white American cheese cubed
  • ½ cup fresh cilantro chopped
  • Salt to taste
  • Optional: ¼ cup sour cream or cream cheese
  • Optional: juice of ½ lime

Instructions
 

  • Roast poblanos until they blister and pull the skins and seeds off.
  • In a skillet, melt butter. Cook onion, garlic and serranos until soft.
  • Stir in 1/2 cup broth, green chile, cilantro, and roasted poblanos and mix to a smooth.
  • Add to a saucepan that contains leftover broth. Cheese may be added and stirred until melted.
  • Add broth as necessary. Optional: add sour cream or lime. Serve warm.
