Ingredients
  

  • 1 cup long-grain white rice
  • 1 3/4 cups water
  • 1 tablespoon olive oil or unsalted butter
  • 1/2 teaspoon salt
  • Zest of 1 lime
  • 2 tablespoons fresh lime juice
  • 1/3 cup finely chopped fresh cilantro

Optional additions:

  • 1 small garlic clove minced
  • Extra lime wedges for serving

Instructions
 

Step 1: Rinse the Rice

  • Place the rice in a fine mesh strainer and rinse under cold water until the water runs mostly clear. This removes excess starch and helps keep the rice fluffy instead of sticky.

Step 2: Add to Rice Cooker

  • Transfer the rinsed rice to your rice cooker. Add water, olive oil or butter, and salt. If using minced garlic, add it now.

Step 3: Cook

  • Close the lid and start the rice cooker using the standard white rice setting. Let it cook completely without lifting the lid.

Step 4: Rest

  • Once the rice cooker switches to warm, let the rice sit undisturbed for 5 minutes. This step allows the steam to finish cooking the grains gently.

Step 5: Fluff

  • Open the lid and fluff the rice gently with a fork. Separate the grains without smashing them.

Step 6: Add Lime and Cilantro

  • In a small bowl, mix lime zest and lime juice. Drizzle over the warm rice. Add chopped cilantro and gently fold everything together.
  • Taste and adjust salt if needed. Serve immediately.
