For the meat filling
- 1 lb ground lamb or ground beef
- 1 tablespoon olive oil
- 1 medium onion finely chopped
- 2 cloves garlic minced
- 2 medium carrots diced
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 cup beef broth
- 1 teaspoon fresh thyme or ½ teaspoon dried
- 1 teaspoon fresh rosemary or ½ teaspoon dried
- ½ teaspoon salt
- ½ teaspoon black pepper
For the mashed potato topping
- 2 pounds potatoes peeled and chopped
- 4 tablespoons butter
- ½ cup milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
Optional topping:
- ¼ cup shredded cheddar cheese
Step 1: Cook the potatoes
Place the chopped potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook for about 15 minutes or until the potatoes are fork tender.
Drain the potatoes and return them to the pot.
Add butter, milk, salt, and pepper. Mash until smooth and creamy. Set aside.
Step 2: Prepare the meat filling
Heat olive oil in a large skillet over medium heat.
Add chopped onion and cook for about 4 minutes until soft.
Add garlic and cook for another minute.
Step 3: Brown the meat
Add the ground lamb or beef to the pan. Cook until browned, breaking it apart with a spoon.
