Ingredients
  

For the Chicken Meatballs

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 egg
  • 3 cloves garlic minced
  • 2 tablespoons green onions finely chopped
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh cilantro chopped

  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 can 13.5 oz coconut milk
  • 1 tablespoon soy sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon lime juice
  • 1/2 teaspoon red chili flakes optional
  • 1 tablespoon fresh cilantro for garnish

Instructions
 

Step 1: Prepare the Meatball Mixture

  • In a large mixing bowl, combine ground chicken, breadcrumbs, egg, minced garlic, grated ginger, soy sauce, green onions, salt, pepper, and chopped cilantro.
  • Use your hands or a spoon to gently mix everything together until just combined. Avoid overmixing because it can make the meatballs dense instead of tender.

Step 2: Shape the Meatballs

  • Scoop small portions of the mixture and roll them into meatballs about 1 to 1.5 inches in diameter. Place them on a plate or tray while you shape the rest.
