Kitchen towel
- 1 cup (240g) full-fat cottage cheese
- 1 large egg
- 2 tablespoons olive oil
- 2 cups (250g) all-purpose flour plus extra for dusting
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¾ teaspoon salt
- 1–2 tablespoons milk if needed
- 1 teaspoon garlic powder optional
- 1 tablespoon chopped fresh herbs (parsley, chives, or dill) optional
- ½ teaspoon black pepper optional
Step 1: Blend the Creamy Base
In a large bowl, whisk together the cottage cheese, egg, and olive oil until mostly smooth. A few small curds are perfectly fine and will melt into the dough as it cooks.
Step 2: Combine the Dry Ingredients
In a separate bowl, stir together the all-purpose flour, baking powder, baking soda, salt, and any optional garlic powder, herbs, or black pepper so everything is evenly combined.
Step 7: Cook to Golden Perfection
- Do not over-knead the dough to maintain tenderness.
- Cook over medium heat to prevent burning before the inside cooks.
- Use full-fat cottage cheese for best flavor and texture.
- Store in an airtight container up to 4 days or freeze up to 2 months.
- Reheat in a skillet for best texture or microwave briefly wrapped in a damp towel.
- Serve as wraps, pizza bases, or with hummus, eggs, or grilled vegetables.
