Ingredients
  

  • 1 cup (240g) full-fat cottage cheese
  • 1 large egg
  • 2 tablespoons olive oil
  • 2 cups (250g) all-purpose flour plus extra for dusting
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • 1–2 tablespoons milk if needed
  • 1 teaspoon garlic powder optional
  • 1 tablespoon chopped fresh herbs (parsley, chives, or dill) optional
  • ½ teaspoon black pepper optional

Instructions
 

Step 1: Blend the Creamy Base

  • In a large bowl, whisk together the cottage cheese, egg, and olive oil until mostly smooth. A few small curds are perfectly fine and will melt into the dough as it cooks.

Step 2: Combine the Dry Ingredients

  • In a separate bowl, stir together the all-purpose flour, baking powder, baking soda, salt, and any optional garlic powder, herbs, or black pepper so everything is evenly combined.

Step 3: Form the Dough

  • Gradually add the dry mixture into the wet ingredients, stirring until a shaggy dough forms. If the dough feels too dry, add 1–2 tablespoons milk until soft but not sticky.

Step 4: Knead Gently

  • Turn the dough onto a lightly floured surface and knead gently for about 2–3 minutes, just until smooth and supple. Avoid overworking to keep the flatbread tender.

Step 5: Rest the Dough

  • Cover the dough with a clean kitchen towel and let it rest for 10–15 minutes. This short rest hydrates the flour and makes rolling much easier.

Step 6: Divide and Roll

  • Divide the dough into 6 equal portions and roll each into a ball. Flatten and roll into circles about ¼-inch thick, keeping edges rustic and natural.

Step 7: Cook to Golden Perfection

  • Heat a non-stick skillet over medium heat. Cook each flatbread for 2–3 minutes until bubbles form and golden spots appear, then flip and cook another 1–2 minutes.

Step 8: Keep Them Soft

  • Transfer cooked flatbreads to a plate and cover with a clean towel to trap steam. This keeps them soft and pliable while you finish cooking the rest.

Notes

  • Do not over-knead the dough to maintain tenderness.
  • Cook over medium heat to prevent burning before the inside cooks.
  • Use full-fat cottage cheese for best flavor and texture.
  • Store in an airtight container up to 4 days or freeze up to 2 months.
  • Reheat in a skillet for best texture or microwave briefly wrapped in a damp towel.
  • Serve as wraps, pizza bases, or with hummus, eggs, or grilled vegetables.
