Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat, small curd works best
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon sugar optional, adjust to taste
  • 1/4 teaspoon salt
  • 1/4 cup milk add more if needed
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon melted butter plus more for cooking

Instructions
 

Step 1: Prepare the Cottage Cheese

  • Place the cottage cheese in a bowl and lightly mash it with a fork. You do not want it completely smooth. A little texture is beautiful in these pancakes. Those tiny curds create creaminess inside each bite.

Step 2: Mix the Wet Ingredients

  • In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and melted butter. Once smooth, add the mashed cottage cheese and gently stir to combine.

Step 3: Combine the Dry Ingredients

  • In a separate bowl, mix the flour, baking powder, salt, and sugar. Stir well so the baking powder spreads evenly.

Step 4: Create the Batter

  • Add the dry ingredients into the wet mixture. Fold gently with a spatula. Do not overmix. The batter should be slightly thick but still scoopable. If it feels too thick, add a tablespoon of milk at a time until it loosens slightly.

Step 5: Heat the Pan

  • Place your skillet over medium heat. Add a small piece of butter and let it melt. Wipe excess with a paper towel so the surface is lightly greased but not oily.

Step 6: Cook the Pancakes

  • Pour about 1/4 cup of batter for each pancake. Cook for 2–3 minutes until small bubbles appear on the surface and the edges look set. Flip carefully and cook another 2–3 minutes until golden brown.
  • The aroma at this point is pure comfort. Slightly buttery, slightly sweet, and warm.

Step 7: Keep Warm and Serve

  • Transfer cooked pancakes to a plate or rack. Repeat with remaining batter. Serve warm with your favorite toppings.
