Ingredients
  

  • 2 cups full-fat cottage cheese
  • 1 cup marinara or pizza sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon red chili flakes optional
  • ½ cup sliced pepperoni or turkey pepperoni
  • ½ cup chopped bell peppers
  • ¼ cup sliced black olives
  • ¼ cup sliced mushrooms
  • Salt and black pepper to taste
  • Fresh basil for garnish optional

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C). If your oven runs hot like mine sometimes does, keep an eye on it after 20 minutes.

Step 2: Season the Cottage Cheese

  • In a bowl, add the cottage cheese, oregano, basil, garlic powder, a pinch of salt, and black pepper. Stir gently. This step is small but important — seasoning the base layer makes a big difference.

Step 3: Assemble the Base

  • Spread the seasoned cottage cheese evenly into your oven-safe dish. Smooth the top with a spoon.

Step 4: Add the Sauce

  • Spoon the marinara sauce evenly over the cottage cheese layer. Don’t mix it in. We want layers, just like a pizza.

Step 5: Add Cheese

  • Sprinkle mozzarella evenly over the sauce. Then add parmesan for that salty, nutty finish.

Step 6: Add Toppings

  • Layer your pepperoni, bell peppers, olives, and mushrooms on top. Press them lightly so they sit into the cheese.

Step 7: Bake

  • Place the dish in the oven and bake for 20–25 minutes, or until the cheese is melted and bubbly. If you want a golden top, broil for 2–3 minutes at the end.

Step 8: Rest and Garnish

  • Let it rest for 5 minutes. This helps it set slightly. Garnish with fresh basil and a sprinkle of chili flakes if you love heat like I do.
