Ingredients
  

  • 2 cups full-fat cottage cheese well drained
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 1 large egg
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • Salt and black pepper to taste

For Coating:

  • 1 cup breadcrumbs panko works beautifully
  • 2 tablespoons grated parmesan
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil for brushing or spraying

Optional for serving:

  • Marinara sauce
  • Ranch dip
  • Spicy yogurt dip

Instructions
 

Step 1: Drain the Cottage Cheese

  • Place cottage cheese in a strainer and let it sit for at least 10 minutes. Press lightly with a spoon to remove extra moisture.

Step 2: Mix the Filling

  • In a large bowl, combine drained cottage cheese, mozzarella, cheddar, egg, flour, garlic powder, onion powder, oregano, paprika, salt, and pepper. Mix until fully combined. The mixture should be thick and scoopable.

Step 3: Chill the Mixture

  • Refrigerate the mixture for 20–30 minutes. This helps it firm up and makes shaping easier.

Step 4: Shape the Sticks

  • Line a baking sheet with parchment paper. Scoop about 2 tablespoons of mixture and shape into sticks about 3 inches long. Place them evenly spaced on the tray.

Step 5: Prepare the Coating

  • In a shallow bowl, mix breadcrumbs, parmesan, and Italian seasoning.

Step 6: Coat the Sticks

  • Gently roll each stick in the breadcrumb mixture, pressing lightly so crumbs stick. Place back on the tray.

Step 7: Bake

  • Preheat oven to 400°F (200°C). Lightly brush or spray sticks with olive oil. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  • For extra crispiness, broil for 1–2 minutes at the end.

Step 8: Rest Before Serving

  • Let them cool for 5 minutes. They firm up slightly as they cool.
  • Serve warm with marinara.

Notes

  • Drain cottage cheese thoroughly.
  • Chill mixture before shaping.
  • Don’t overcrowd the baking sheet.
  • Flip halfway for even browning.
