- 2 cups full-fat cottage cheese well drained
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 1 large egg
- ½ cup all-purpose flour
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- ½ teaspoon paprika
- Salt and black pepper to taste
For Coating:
- 1 cup breadcrumbs panko works beautifully
- 2 tablespoons grated parmesan
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil for brushing or spraying
