Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup basil pesto store-bought or homemade
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning

Optional ingredients:

  • ½ teaspoon red pepper flakes
  • ½ cup cherry tomatoes halved
  • Fresh basil leaves for garnish

Step 1: Prepare the Chicken

  • Slice the chicken breasts in half lengthwise for even cooking. Season both sides with salt, pepper, and Italian seasoning. This step ensures every bite is flavorful from the inside out.

Step 2: Sear the Chicken

  • Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 4–5 minutes per side until golden and just cooked through. Remove from the pan and set aside—this keeps the chicken juicy.

Step 3: Build the Sauce

  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream, stirring gently as it warms and thickens slightly.

Step 4: Add the Pesto and Cheese

  • Stir in the pesto and Parmesan cheese, letting the sauce turn smooth and vibrant green. The aroma at this stage is incredible—rich, herby, and comforting.

Step 5: Finish the Dish

  • Return the chicken to the skillet and simmer gently for 5–7 minutes, spooning the sauce over the top. Add red pepper flakes or cherry tomatoes if using.
