Equipment

  • Large mixing bowl
  • Fork or whisk
  • Parchment paper or silicone baking mat
  • Baking sheet
  • Spoon or small cookie scoop
  • Oven
  • Spatula

Ingredients

  • 1 cup cottage cheese full-fat for best flavor
  • 1 large egg
  • ¼ cup grated parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Optional: dried herbs oregano, thyme, rosemary

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.

Step 2: Mix Ingredients

  • In a large mixing bowl, combine cottage cheese, egg, parmesan, garlic powder, paprika, and optional herbs. Season lightly with salt and pepper. Mix until fully combined.

Step 3: Form Chips

  • Using a spoon or small cookie scoop, drop small portions onto the prepared baking sheet. Flatten each slightly with the back of a spoon or spatula to form thin rounds. Thin discs will become crispier.

Step 4: Bake

  • Place the sheet in the oven and bake for 20–25 minutes, or until edges are golden brown and crisp. Keep an eye on them; thin chips can brown quickly.

Step 5: Cool

  • Allow the chips to cool on the baking sheet for 5–10 minutes. They will crisp further as they cool.

Step 6: Serve

  • Enjoy plain or serve with your favorite dip. Store leftovers in an airtight container for up to 3 days.
