Ingredients
  

  • 4 medium potatoes Yukon Gold or similar, peeled and cut into wedges
  • ¼ cup olive oil
  • ¼ cup fresh lemon juice
  • 3 cloves garlic minced
  • 1 cup chicken broth or vegetable broth
  • 1 teaspoon dried oregano
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • ½ teaspoon paprika optional
  • Fresh parsley for garnish

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 200°C (400°F). A hot oven is key to getting those crispy edges.

Step 2: Prepare the Potatoes

  • Peel and cut the potatoes into evenly sized wedges. Try to keep them similar in size so they cook evenly.

Step 3: Make the Flavor Base

  • In a large bowl, combine olive oil, lemon juice, minced garlic, chicken broth, oregano, salt, pepper, and paprika. Mix well until everything is blended.

Step 4: Coat the Potatoes

  • Add the potato wedges to the bowl and toss them well so they are fully coated in the flavorful mixture.

Step 5: Arrange in Baking Dish

  • Transfer the potatoes and all the liquid into a baking dish. Spread them out in a single layer for even cooking.

Step 6: First Bake

  • Bake for about 30 minutes. During this time, the potatoes will absorb the liquid and soften.

Step 7: Flip and Crisp

  • Remove from the oven, turn the potatoes carefully, and return them to the oven for another 20 minutes or until golden and crispy.

Step 8: Final Touch

  • Once done, sprinkle fresh parsley on top and an extra squeeze of lemon juice if desired.
