Ingredients
  

  • 3 to 4 pounds beef chuck roast
  • 4 cups beef broth
  • 1 packet onion soup mix
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 large yellow onion thinly sliced
  • 6 to 8 French rolls or hoagie rolls
  • 6 to 8 slices provolone cheese optional

Optional Add-Ins:

  • 1 tablespoon soy sauce for deeper umami
  • ½ teaspoon black pepper
  • ½ cup sliced mushrooms
  • Fresh parsley for garnish

Instructions
 

Step 1: Prepare the Beef

  • Start by placing the beef chuck roast into the bottom of your crock pot. I don’t bother searing it first for this recipe—the slow cooker does all the work—but make sure the meat is nestled in snugly so it stays moist.

Step 2: Build the Flavor Base

  • Sprinkle the onion soup mix evenly over the beef, then add garlic powder, thyme, and black pepper if using. Scatter the sliced onions on top, letting them drape over the meat like a cozy blanket.

Step 3: Add the Liquid

  • Pour the beef broth and Worcestershire sauce around the roast, not directly on top. You want the seasonings to stay in place while the liquid gently surrounds everything.

Step 4: Slow Cook to Perfection

  • Cover and cook on low for 8–9 hours or high for 4–5 hours. You’ll know it’s ready when the beef pulls apart effortlessly and smells deeply savory.

Step 5: Shred the Beef

  • Using tongs, carefully remove the beef and shred it with two forks. It should be juicy, tender, and almost buttery in texture. Return the shredded meat to the crock pot so it can soak up even more flavor.

Step 6: Toast the Bread

  • Lightly toast your rolls until they’re crisp on the outside but still soft inside. This helps them hold up to the juicy beef and dipping sauce.

Step 7: Assemble the Sandwiches

  • Pile the beef high onto each roll. Add a slice of provolone if you like, letting it melt into the warm meat. Serve immediately with small bowls of the cooking liquid for dipping.
