Equipment

  • 6-quart crock pot (slow cooker)
  • Large skillet for optional searing
  • Tongs
  • Sharp chef’s knife
  • Cutting board
  • Measuring cups and spoons.
  • Small mixing bowl
  • Whisk

Ingredients

  • 2 pounds pork tenderloin usually 1–2 tenderloins
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cloves garlic minced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil for searing
  • 1 tablespoon cornstarch optional, for thickening
  • 1 tablespoon water to mix with cornstarch

Instructions

Season the Pork with Love

  • Pat the pork tenderloin dry with paper towels, then mix salt, pepper, paprika, thyme, and rosemary in a bowl. Rub the seasoning generously over every side, pressing gently so it adheres and builds deep flavor.

Sear for Extra Depth

  • Heat olive oil in a large skillet over medium-high heat until shimmering. Sear the tenderloin on all sides for 2–3 minutes per side until golden brown, creating a flavorful crust that locks in juices.

Build the Flavor Base

  • Place the pork into the crock pot. In a bowl, whisk together chicken broth, soy sauce, brown sugar, Dijon mustard, and minced garlic until combined, then pour the mixture evenly over the pork.

Slow Cook to Tender Perfection

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours. The pork should reach 145°F internally and feel fork-tender, absorbing the savory, slightly sweet sauce as it slowly cooks.

Create a Silky Sauce

  • Remove the pork and let it rest. If desired, stir cornstarch mixed with water into the crock pot juices and cook on HIGH for 10–15 minutes until the sauce thickens and coats the back of a spoon.

Slice and Serve

  • Slice the rested pork against the grain into medallions. Arrange on a platter and spoon the glossy herb-infused sauce generously over the top, letting it pool slightly for maximum flavor in every bite.

Notes

  • Do not overcook the pork; use a thermometer and remove at 145°F.
  • Searing adds deeper flavor but can be skipped if short on time.
  • Slice against the grain for the most tender texture.
  • Serve with mashed potatoes, egg noodles, or roasted vegetables.
  • Store leftovers in an airtight container up to 4 days or freeze up to 3 months.
