1 medium or large Crock Pot (3–6 quart is perfect)
Mixing bowl (optional, you can mix right in the crock pot)
Rubber spatula or wooden spoon.
Cheese grater (if shredding your own cheese—which I highly recommend)
Serving bowl (or just let guests scoop it straight from the crock pot)
- 2 cans 16 oz each refried beans
- 1 package 8 oz cream cheese, softened
- 1 cup sour cream
- 1 packet taco seasoning or 2 tbsp homemade
- 1 can 4 oz diced green chiles
- 2 cups shredded Mexican cheese blend
- 1 cup shredded Monterey Jack or Pepper Jack
- 1 –2 tbsp hot sauce optional
- 1 small can jalapeños diced (optional)
- Chopped cilantro for topping optional
- Sliced green onions for garnish optional
Turn on the Crock Pot
Cook on LOW for 2–3 hours or HIGH for 1–1.5 hours, stirring occasionally until it’s creamy, smooth, and melty.
Add More Cheese
Once everything melts together, sprinkle the remaining cheese on top, cover again, and let it melt for another 10–15 minutes.
