Ingredients
  

  • 2 pounds potatoes peeled and sliced into 1/4-inch rounds
  • 14 ounces kielbasa sausage sliced into coins
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 2 tablespoons butter melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Optional ingredients:
  • 1/2 teaspoon red pepper flakes for heat
  • 1/2 teaspoon dried thyme or parsley
  • 1/2 cup cooked bacon bits
  • 1/4 cup grated Parmesan for extra depth

Instructions
 

Step 1: Prep the Potatoes and Kielbasa

  • Start by peeling and slicing your potatoes into even rounds. Uniform slices help them cook evenly and turn perfectly tender. Slice the kielbasa into thick coins, releasing that smoky aroma that already hints at what’s to come.

Step 2: Build the Creamy Base

  • In a large bowl, whisk together the heavy cream, sour cream, melted butter, garlic, salt, pepper, and paprika. This mixture should smell rich and savory, with just a gentle warmth from the spices.

Step 3: Layer the Crockpot

  • Lightly grease the crockpot insert, then layer half of the potatoes on the bottom. Sprinkle with some onion, add half the kielbasa, and a generous handful of cheese. Pour over a portion of the cream mixture, letting it seep into the layers.

Step 4: Repeat and Finish

  • Repeat the layers with the remaining potatoes, onions, kielbasa, cheese, and cream mixture. Use a spatula to gently press everything down so it’s evenly distributed.

Step 5: Slow Cook to Perfection

  • Cover and cook on low for 5–6 hours or high for 3–4 hours. You’ll know it’s ready when the potatoes are fork-tender and the top looks irresistibly creamy and bubbly.

Step 6: Rest and Serve

  • Let the dish rest for about 10 minutes before serving. This helps the sauce thicken slightly and makes each scoop hold together beautifully.
