- 2 pounds potatoes peeled and sliced into 1/4-inch rounds
- 14 ounces kielbasa sausage sliced into coins
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup heavy cream
- 1/2 cup sour cream
- 1 small onion finely diced
- 2 cloves garlic minced
- 2 tablespoons butter melted
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Optional ingredients:
- 1/2 teaspoon red pepper flakes for heat
- 1/2 teaspoon dried thyme or parsley
- 1/2 cup cooked bacon bits
- 1/4 cup grated Parmesan for extra depth
Step 1: Prep the Potatoes and Kielbasa
Step 2: Build the Creamy Base
In a large bowl, whisk together the heavy cream, sour cream, melted butter, garlic, salt, pepper, and paprika. This mixture should smell rich and savory, with just a gentle warmth from the spices.
Step 3: Layer the Crockpot
Lightly grease the crockpot insert, then layer half of the potatoes on the bottom. Sprinkle with some onion, add half the kielbasa, and a generous handful of cheese. Pour over a portion of the cream mixture, letting it seep into the layers.
Step 4: Repeat and Finish
Repeat the layers with the remaining potatoes, onions, kielbasa, cheese, and cream mixture. Use a spatula to gently press everything down so it’s evenly distributed.
Step 5: Slow Cook to Perfection
