Ingredients
  

  • 1 pound ground beef or ground turkey for a lighter option
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 bell pepper diced (optional for extra sweetness)
  • 1 15 oz can kidney beans, drained and rinsed
  • 1 15 oz can black beans, drained and rinsed (optional)
  • 1 28 oz can crushed tomatoes
  • 1 8 oz can tomato sauce
  • 1 cup beef broth or chicken/vegetable broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper adjust to taste
  • Salt and black pepper to taste
  • 2 cups uncooked elbow macaroni
  • 2 cups shredded cheddar cheese plus extra for topping
  • 1/2 cup sour cream optional, for creaminess
  • Fresh parsley or green onions chopped (for garnish)

Optional ingredients for extra flavor:

  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon oregano
  • 1/4 teaspoon cinnamon for a subtle warmth

Step 1: Brown the Meat and Sauté Veggies
