For the Beef & Potatoes:
- 900 g 2 lbs beef stew meat or chuck roast, cut into bite-sized pieces
- 700 g 1.5 lbs baby potatoes (halved if large)
- 4 tablespoons unsalted butter melted
- 5 cloves garlic minced
- 1 cup beef broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoon fresh parsley chopped (for garnish)
Optional additions:
- ½ teaspoon red pepper flakes for mild heat
- 1 tablespoon Worcestershire sauce for deeper flavor
Step 1: Prepare the Beef
Pat the beef dry with paper towels. This helps develop flavor.
In a bowl, toss the beef with salt, pepper, smoked paprika, thyme, and rosemary. Make sure the seasoning coats every piece evenly.
Step 2: Layer the Crockpot
Step 3: Make the Garlic Butter Mixture
In a small bowl, combine melted butter, minced garlic, olive oil, and Worcestershire sauce (if using). Stir well.
Pour this mixture evenly over the beef and potatoes.
