Ingredients
  

For the Beef & Potatoes:

  • 900 g 2 lbs beef stew meat or chuck roast, cut into bite-sized pieces
  • 700 g 1.5 lbs baby potatoes (halved if large)
  • 4 tablespoons unsalted butter melted
  • 5 cloves garlic minced
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon fresh parsley chopped (for garnish)

Optional additions:

  • ½ teaspoon red pepper flakes for mild heat
  • 1 tablespoon Worcestershire sauce for deeper flavor

Instructions
 

Step 1: Prepare the Beef

  • Pat the beef dry with paper towels. This helps develop flavor.
  • In a bowl, toss the beef with salt, pepper, smoked paprika, thyme, and rosemary. Make sure the seasoning coats every piece evenly.

Step 2: Layer the Crockpot

  • Add the baby potatoes to the bottom of the crockpot. Spread them out evenly.
  • Place the seasoned beef bites on top of the potatoes.

Step 3: Make the Garlic Butter Mixture

  • In a small bowl, combine melted butter, minced garlic, olive oil, and Worcestershire sauce (if using). Stir well.
  • Pour this mixture evenly over the beef and potatoes.

Step 4: Add the Broth

  • Pour the beef broth around the edges of the crockpot. This keeps everything moist while cooking.

Step 5: Slow Cook

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  • The beef should be fork-tender and the potatoes soft but not mushy.

Step 6: Finish and Garnish

  • Gently stir everything together to coat in the buttery sauce.
  • Sprinkle fresh chopped parsley on top before serving.
  • Serve hot and enjoy.
